    Hey, my loaf keeps undercooking the middle. It's got a puddle in middle while the outsides are firm. This results in the cake center collapsing. What am I doing wrong here?

      After further research....he has given the absolute wrong bake time. This takes about an hour to bake....not 25 minutes.

    One can make their own candies citrus rind as well. There's a recipe in The Joy of Cooking. They're very time consuming, but worth it to save some money. Also, candy is always best done on a cool crisp day.

    "Bake 25-30 min, until the loaf sounds hollow when tapped underneath"? How? Take it out of the pan, tap it, and put it back if doesn't sound hollow?

    Never place caning jars into an oven for heating. They are not dry oven heat proof and can break. This comes from ball canning information.
